You can use the shining coins in Endless mode only.

In Endless, some shops will be replaced with a different trader, who only accepts Shining coins. He sells permanent buffs to stats that are applied to all characters afaik.

Each map specialises in two stats to increase:

• Endless Pinewood Valley can give: max hp +20 or regen +0.1 per coin traded.
• Endless Plaguelands can give: Physical Defence or Physical Attack Power per coin traded.
• Endless Leviathan’s Lair can give: Magic Defence or Magic Power per coin traded.
• Endless Scarlet Bridge can give: Spirit or Crit Damage per coin traded.
• Endless Scarlet Tower can give: Attack Speed or Spell Cooldown per coin traded.
